  • 3-5 overripe bananas
  • 1/3 cup of melted butter

  • 1 teaspoon of imitation vanilla extract
  • 3 teaspoons of baking powder
  • 1 ½ cups of flour

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Mash all bananas in a medium bowl.
  3. Add the butter, egg and vanilla extract.
  4. A note about the reason, why i use 3 teaspoons of baking powder: The original recipe use only 1 teaspoon of baking soda and a dash of salt, but on day, my Mother was out of baking soda. We search and found that 1:3 substitution was possible if I ditched the salt, so that’s what I went with.
  5. Pour the batter into the prepaired 8″x4″ loaf pan when you get a blended mixture resembling really chunky tapioca pudding.
  6. Bake at 350 degrees F until a tester inserted into center comes out clean, it’s about 60 minutes.
  7. Let it rest in the pan at least 15 minutes, then turn it out onto a cake rack to cool completely before slice to serve.
